Introduction to Gin: Clover Leaf Cocktail
Made when raspberries are fresh and in season, this pre-prohibition cocktail is perfectly light, sharp and slightly tart providing a refreshing sipping drink to complement the long hot days of summer. This Clover Leaf is an adaptation of the Clover Club Cocktail first conceived of at the Bellevue-Stratford Hotel in Philadelphia somewhere around the 1930’s. It was named after the Clover Club group (something of a Friar’s Club) which met at the hotel until at least World War I. It is the addition of fresh mint that turns the Clover Club into the Clover Leaf. If you’re new to gin, don’t be put off by any pre-conceived notions of strong botanicals or liquor forward spirits. The gin in this drink is in perfect balance with the fresh fruit, herbs, and juices and the botanicals of the spirit merely function to enhance these flavors.
