What Monin flavors are made with No Artificial Ingredients?
Toggle answerHow do you calculate calories in your Sugar Free and Natural Zero (Zero Calorie Natural) flavors?
Toggle answerErythritol’s caloric value of approximately 0.2 kcal/g and high digestive tolerance distinguishes it from other polyols. Erythritol contains approximately 7 - 13% of the calories of other polyols and 5% of the calories of sucrose. Approximately 90% of Erythritol is quickly absorbed, poorly metabolized, and eliminated unchanged. It is not fermented by colon bacteria to produce unwanted side effects typically seen with other sugar alcohols. Because erythritol is not completely metabolized and absorbed by the human body it contributes negligible calories.

How do you care for Monin pumps?
Toggle answer- We suggest that syrup, sauce, concentrated flavor and purée pump openings are covered to protect the product from insects, fermentation and mold. Monin 1L and 750ml syrup pumps can be covered with the black protector that comes with the pump. For all other pumps this can be done with plastic wrap or foil.
- When changing pumps, we recommend that the bottle opening is covered to protect the product from insects and environmental contaminants.
- We do not suggest the washing of pumps as this could contaminate the product with detergent or water if the pumps are not completely dried or could result in flavor transfer if the pumps are reused on differing flavors.
- When reusing a pump or cap make sure it is from the same flavor so there is no flavor transfer.
- Pumps can be reused for an indefinite period with the same flavor as long as there is no contamination or spoilage.
- The solid content in Monin sauces may cause the pumps to clog over time. We suggest replacing the pump and ensuring that the pump is used frequently.

TROUBLESHOOTING
The milk is curdling when I add certain flavors. Why?
Toggle answerJust like mixing lemon juice with milk will cause curdling, mixing some naturally tart Monin Syrups with milk (especially hot milk) may not be recommended.
If a flavor is really tart in nature (e.g. lemon, lime, orange, pomegranate) the corresponding syrup will usually not be recommended with dairy products.
French Raspberry Syrup and Candied Orange Syrup are tart flavors that have been specially formulated to work well with dairy ingredients.
Try mixing 1/4 oz. of Vanilla or French Vanilla Syrup with the tart flavoring before adding any milk product. This sometimes works to balance the acidity level and prevent curdling from occurring, without changing the overall taste profile drastically.
