Irish Cream Chocolate Mousse

- 8 oz. semisweet chocolate morsels
- 2 Tbsp. granulated sugar
- 3 large egg yolks
- 6 Tbsp. Monin Irish Cream Syrup - divided
- 1 cup heavy whipping cream
- 2 Tbsp. powdered sugar

Preparación
- Using a double boiler, melt the chocolate and granulated sugar until well incorporated and smooth in texture.
- Add the egg yolks and 1/4 cup of the Irish cream syrup and whisk in until thoroughly blended.
- Continue to gently heat the mixture in the double boiler, whisking frequently, until warmed through and slightly thickened.
- Once thickened, remove from the heat and allow to cool to room temperature.
- In a separate mixing bowl combine the cream and powdered sugar and whip to stiff peaks. Add the remaining 2 tablespoons of Irish cream syrup to the whipped cream and mix well.
- Gently fold the cream mixture into the chocolate in 3 to 4 separate batches until fully incorporated.
- Cover tightly and refrigerate for at least 2 hours. Once the mixture has fully chilled, serve as desired.
