Winter Citrus Curd

Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 6 large egg yolks
  • 2/3 cup

Tamaño de porción: 16oz.

Instructions

      1. In a heatproof glass mixing bowl whisk together the sugar, eggs, egg yolks, winter citrus syrup and lime juice.
      2. Place the bowl over a pot of gently simmering water and heat, stirring occasionally, until the mixture has thickened and reached 160° F.
      3. Once thickened, remove from the heat and whisk in the butter until melted and fully incorporated. Season with salt as desired.
      4. Pour the mixture into a container, place plastic wrap directly on the surface of the curd and refrigerate for at least 4 hours – until the curd has fully set.
      5. Keep refrigerated until use.
