Spicy Pickled Pineapple

Ingredients

  • 1 1/2 cups rice wine vinegar
  • 1 cup water
  • 1/2 cup Monin Honey Organic Sweetener
  • 1 1/2 tsp. salt
  • 1/2 pineapple - peeled - cored and cut into 1 - inch strips
  • 1 habanero pepper - halved
  • 1 tsp. lime zest

Instructions

      1. Combine the rice vinegar, water, agave and salt in a medium pot and bring to a boil.
      2. Place the habanero, lime zest and pineapple into a heatproof container and set aside.
      3. Once the vinegar mixture comes to a boil, remove from the heat and pour over the pineapple.
      4. Move the mixture into the refrigerator and allow to cool completely. Cover tightly and refrigerate for at least a day before use.
