Spicy Pickled Pineapple
Ingredients
- 1 1/2 cups rice wine vinegar
- 1 cup water
- 1/2 cup Monin Honey Organic Sweetener
- 1 1/2 tsp. salt
- 1/2 pineapple - peeled - cored and cut into 1 - inch strips
- 1 habanero pepper - halved
- 1 tsp. lime zest

Instructions
- Combine the rice vinegar, water, agave and salt in a medium pot and bring to a boil.
- Place the habanero, lime zest and pineapple into a heatproof container and set aside.
- Once the vinegar mixture comes to a boil, remove from the heat and pour over the pineapple.
- Move the mixture into the refrigerator and allow to cool completely. Cover tightly and refrigerate for at least a day before use.
