Spiced Pumpkin Chocolate Chip Cookies
Ingredients
- 1/2 lb. (2 sticks) butter - softened
- 1/2 cup light brown sugar
- 1 cup granulated sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 large egg
- 1/3 cup Monin Monin Spiced Pumpkin Purée
- 3 cups all - purpose flour
- 2 cups milk chocolate chips

Instructions
- Preheat oven to 350º F. and line a sheet tray with parchment paper.
- Using a stand mixer, beat the butter together with the brown sugar and granulated sugar on medium speed until well incorporated and fluffy.
- Add the baking soda and baking powder and mix in completely, making sure to scrape down the sides of the bowl consistently.
- Add the pumpkin purée and the egg and beat in until fully incorporated.
- Once all ingredients are well combined, slowly add the flour to the mixer and beat until fully incorporated. When the batter is finished, fold in the chocolate chips until well mixed.
- Using a 1-ounce scoop, place the dough onto the prepared sheet pan with roughly 2 inches in between.
- Bake for 10-12 minutes, until the edges are slightly browned, but the tops are still soft and fluffy.
- Remove from the oven and allow to cool on baking sheet for 2 minutes before transferring to a wire rack to cool completely.
