Spiced Brown Sugar Mashed Sweet Potatoes
Ingredients
- 2 lb. sweet potatoes - peeled and roughly chopped
- 2 cups chicken or vegetable stock
- 1 cup heavy cream
- 1/4 lb. (1 stick) butter - divided
- 1 tsp. kosher salt
- 1/2 cup Monin Monin Spiced Brown Sugar Syrup

Instructions
- In a saucepan, combine the sweet potatoes, stock, cream, 4 tablespoons of butter and salt and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and simmer the mixture until the potatoes are fully cooked and tender, 15 to 20 minutes.
- When the potatoes are fully cooked, remove from the heat and strain out the liquid using a colander.
- Place the drained potatoes into a deep mixing bowl, along with the spiced brown sugar syrup and 1/4 cup of the strained cooking liquid.
- Using a hand mixer or potato masher, mash the potatoes until well incorporated with the other ingredients.
- Add the remaining butter and continue to mix until melted and well incorporated into the potatoes.
- Serve immediately, as desired.
