Pomegranate Curd

Instructions

      1. In a mixing bowl whisk together the syrup and lemon juice and set aside.
      2. In a saucepan, combine the cream and sugar and bring to a simmer over medium heat. Once the sugar has dissolved completely, remove from the heat.
      3. Add the syrup and lemon juice mixture to the cream and whisk thoroughly. Strain the mixture through a fine mesh sieve.
      4. Divide the mixture between 9 (2 ounce) serving dishes and chill for at least four hours, preferably overnight.
      5. Once chilled and fully set, serve as desired.
