Habanero Street Corn Salad

Ingredients

  • 9 ears of corn - shucked and cleaned
  • 1 Tbsp. minced garlic
  • 1 Tbsp. fresh lime juice
  • 1/2 cup mayonnaise
  • 1/2 cup finely grated cotija cheese
  • 1/4 cup sour cream
  • 4 pumps Monin Habanero Concentrated Flavor
  • 1/2 cup finely diced red bell peppers
  • 1/4 cup finely diced red onion
  • Kosher salt and ground black pepper - to taste

Instructions

      1. Preheat a char-broiler to high and grill the corn until roughly half of the kernels are slightly charred.
      2. Remove from the grill, cool slightly, and cut the kernels off the cob into a bowl.
      3. In a separate bowl, combine the garlic, lime juice, mayonnaise, cotija cheese, sour cream and habanero concentrated flavor and mix well.
      4. Add the bell peppers and onions to the bowl with the corn. Add the mayonnaise mixture into the vegetables and stir until it comes together. Season to taste with salt and black pepper as needed.
      5. Place the mixture into an airtight container and refrigerate, allowing the flavors to meld for at least an hour. Serve as desired.
