Basil German Potato Salad
Ingredients
- 4 lb. Yukon gold potatoes
- 1/2 cup distilled white vinegar
- 1/4 cup finely diced white onion
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. whole grain mustard
- 2 cloves garlic - minced
- 1 Tbsp. granulated sugar
- 1 Tbsp. extra virgin olive oil
- 6 pumps Monin Monin Basil Concentrated Flavor

Instructions
- Place the potatoes into a large pot and cover them with water.
- Bring the water to boil and cook the potatoes until tender, but not overdone, about 20-30 minutes.
- Drain the potatoes, cool slightly, then cut them into 1/4-inch slices and set aside.
- In a mixing bowl, combine the vinegar, onion, parsley, mustard, garlic, sugar, oil and basil concentrated flavor and whisk until well incorporated.
- Dress the potatoes with the vinegar mixture and cover tightly and refrigerate for at least 20 minutes to allow the flavors to meld.
- Keep refrigerated until service.
